Next: Leftovers make great school lunches! Steamed broccoli topped with ghee, quinoa noodles, easy homemade meatballs cut in half {recipe below}, freeze dried mango and banana. Easy Meatballs: 1 lb organic grassfed beef 3-4 slices whole grain sprouted bread Butter, garlic powder {for seasoning bread} 1/2 cup shredded Italian cheese 2 tsp dried oregano Salt, pepper Heat oven to 375*F. Toast bread and top with butter and a sprinkle of garlic powder. Place crumbs in a high powered blender or food processor {we ❤️ Vitamix} and process into breadcrumbs. In a large bowl, combine crumbs, beef, cheese, and seasoning. Roll into 1" balls and placed on a greased baking sheet. Bake 12-15 minutes or until lightly browned and cooked through {internal temp of 160*}. Previous: Salmon salad - made with Greek yogurt - for the win! Super high in protein and omega-3s, with a nice tang and veggie crunch. Serve nestled within celery stalks, scooped up by whole grain crackers, or atop half an avocado. Modifications listed below for infants 👶 Our resident taste tester {2.5 years} wanted to lick the bowl! 1 large can BPA-free wild salmon {we used Trader Joe's} 3 celery stalks, diced 1/2 small red onion, diced 2 dill pickles, chopped 3 T plain Greek yogurt {whole or 2%} 1 T safflower mayo 1 T yellow mustard Salt and pepper to taste Combine all ingredients, mix well, and chill before serving. Store covered in the fridge for 3 days. Note: if using salmon with bones, make sure they're crushable with fingers and not sharp or hard.
