✔️ 16 oz frozen organic corn
✔️ 2 small cans sliced olives
✔️ 1 red bell pepper, chopped
✔️ 1 small purple onion, chopped
✔️ 5 gloves garlic, minced
✔️ 1/4 cup extra virgin olive oil
✔️ 1/2 cup lemon juice
✔️ 3 T. apple cider vinegar
✔️ 1 tsp. dried oregano
✔️ 1 can black beans, rinsed {optional; not shown because I couldn't find the damn can #momlife}
✔️ 3-4 diced avocados
✔️ Dash sea salt
➕ Combine all ingredients except avocado in a large bowl and refrigerate for at least 2 hours so the flavors set.
➕ Chop the avocados and add before serving - sometimes I use more avocados depending on what I have on hand!
➕ Dip, spread on crostini, or just eat with a SPOON!
