It's still strawberry 🍓season! Take advantage of these delicious beauties, mamas {and dads}!! I love making Strawberry Spinach Salad with Raspberry Vinaigrette for baby showers and brunches. It works for kiddos too as long as you omit or finely crush the walnuts! 😋 Full disclosure: every time I make the dressing I change it up, so I'm going to give you estimates and encourage you to taste it as you make it! {I'm totally a prepare-by-taste kinda cook! • 2 bags pre-washed organic spinach
• 6-8 oz crumbled goat cheese
• 2 cups organic strawberries, washed and sliced
• 1-2 cups walnuts, chopped {or leave halved} • Dressing •
• 1/4 cup olive oil
• 1/4 cup balsamic vinegar
• 1/2 - 3/4 cup raspberries {use frozen for a thicker dressing}
• Honey to taste if desired {avoid if baby is eating any part of the salad}
• Salt to taste
Blend dressing in a @vitamix or other food processor/blender. Pour atop salad, making sure not to overdress. Toss and enjoy! #feedinglittleslunches
